Special Salads – Salmon with Caramelize onions


Ingredients (3 servers):

* 3 medium onions
* 4-5 tsp sugar
* 75 gr raisin
* 2 tsp balsamic vinegar
* 3 big sheets of lettuce
* 3 salmon slice
* 120 gr goat cheese
* 150 gr corn
* olive oil
* salt
1. Caramelize the onions: add very little oil in the skillet. Cut the onion into strips and put all the chopped onion in the skillet. Add very little salt and let the onion cooked over low heat, stirring constantly. The onion must segregate and be cooked in its own juice. Around 50 min.
2. When the onions are soft, add the sugar and stir continuously.
3. Add the raisins
4. Add the balsamic vinegar
5. Wait until the onion take brown color and the vinegar evaporates.
6. Clean the lettuce, cut and put on the plate base
7. Add smoked salmon strips over lettuce
8. Crumble the goat cheese and put it on the salmon
9. Add the onion mix, raisins, sugar and vinegar
10. Finally add the corn and serve.
